Moroccan Chickpea & Lentil Curry

Luckily, I like legumes which gives us a lot of health benefits like cholesterol lowering effect. One of my favorite dish with legumes is this one, moroccan chickpea & lentil curry!


Actually, I've been cooking this dish many times (and already in my previous post in the blog) but haven't shared the recipe here. It doesn't have many calories so I don't feel guilty even if I overeat! Serving it with brown rice makes me feel less guilty too\(^0^)/

1 Onion, sliced thin
5 cloves garlic, pressed
1 medium Eggplant, cut into 2cm-pieces
Pinch of red chili flakes
1 can Chickpea, drained
1 can Lentil, drained
1 can Tomato diced
1/2 cup Tomato sauce
2 tsp Turmeric
1/2 Garam masala
1-1/4 cup Vegetable broth
1/2 cup Sultanas


1. Prepare onion & garlic, let sit for at least 5 minutes (oxygen will help their nutrition work better)
2. Cook (saute) onion in 1 TBS broth in a pot for 5 mins, add garlic, eggplant, garam masala, turmeric and mix well for 1 min, and add broth, diced tomato & tomato sauce. Stir & cover, cook over medium low heat for 15 mins. (stir occasionally) or until eggplant is tender.
3. Add chickpea, lentils, red chili flakes and sultanas. Simmer for 5mins and season with salt & pepper.


* Any vegetable can be added :), chili flakes can be very spicy T_T
